This extract is derived from high-protein bread yeast (baker’s yeast, Saccharomyces cerevisiae), cultured on a starch-based medium. Compared to wine or beer yeast, bread yeast contains significantly lower levels of pigments, specifically plant-derived tannic acids, which are known to inhibit bacterial growth. This reduction supports improved culturing consistency and yield.
The yeast undergoes autolysis, pasteurisation, concentration, and vacuum powdering, followed by full enzymatic digestion of cellular components. Avoidance of prolonged heat treatment ensures maximal preservation of heat-sensitive nutrients.
The resulting extract delivers superior protein nitrogen content (>5%) predominantly as free amino acids and balanced micronutrients, surpassing the ~4% typically found in conventional yeast extracts. This optimised nutrient profile makes it particularly suitable for refined and sensitive cell culture systems requiring high bioavailability and minimal metabolic interference.
